Ingredients

  • 1 cup whole wheat flour
  • 2 tbsp coconut sugar
  • 1 tbsp Zen Spirit chia seeds
  • 1 tsp vanilla extract
  • 1 ½ cup almond milk
  • Coconut oil for frying

Utensils

  • Mixing bowl
  • Hand mixer
  • Pancake pan

DIRECTIONS

  • In a medium bowl, combine together whole wheat flour, coconut sugar, Zen Spirit chia seeds, vanilla extract, and half of the almond milk. Using a hand mixer, beat well on medium-high speed until fully incorporated.

  • Now, add the remaining milk and continue to beat until smooth.

  • Grease a medium pancake pan with some coconut oil and heat up over medium-low heat. Add about one cup of the mixture and cook for 1-2 minutes per side.

  • When done, top with some blueberries and drizzle with melted chocolate.

  • Serve.
