Place the coconut butter in a microwave-safe bowl and gently melt for 30 seconds. Transfer to a blender or a food processor along with shredded coconut, maple syrup, and matcha green tea powder. Process until fully incorporated.
Line a small baking dish with some parchment paper and add the coconut mixture. Flatten the surface with a kitchen spatula or your hands and refrigerate for 30 minutes.
Meanwhile, melt the chocolate in a double boiler (or in simply in a microwave). Remove the coconut mixture from the refrigerator and slice into 12 equal bars. Dip each bar in chocolate and transfer to a wire rack. Cool completely and then refrigerate for about an hour.
