Ingredients

  • 1 cup coconut butter, softened
  • 2 cups shredded coconut
  • 1 ½ tbsp maple syrup (or agave nectar)
  • 1 tbsp matcha green tea powder
  • 2 cups vegan chocolate of your choice

Utensils

  • Blender or a food processor
  • Baking dish lined with some parchment paper

DIRECTIONS

  • Place the coconut butter in a microwave-safe bowl and gently melt for 30 seconds. Transfer to a blender or a food processor along with shredded coconut, maple syrup, and matcha green tea powder. Process until fully incorporated.

  • Line a small baking dish with some parchment paper and add the coconut mixture. Flatten the surface with a kitchen spatula or your hands and refrigerate for 30 minutes.

  • Meanwhile, melt the chocolate in a double boiler (or in simply in a microwave). Remove the coconut mixture from the refrigerator and slice into 12 equal bars. Dip each bar in chocolate and transfer to a wire rack. Cool completely and then refrigerate for about an hour.

  • When done, drizzle with some more melted chocolate.

For me, weekend usually means making a stash of cookies and brownies for the next week. I thought I'd start this week with something new – vegan matcha green tea bounties. Classic bounties have always been my favorite quick snack and I've been meaning to make them at home for ages.

These slightly modified bounties are completely vegan-friendly, based on coconut butter, vegan chocolate, and combined with my favorite matcha green tea powder which adds a specific taste you'll adore.

Naturally, this adds up some amazing nutritional values to this classic chocolate recipe. Relatively easy to make, these fabulous treats are a perfect option for handling those afternoon sugar cravings or a fantastic snack to go. Dip each bar in your favorite melted vegan chocolate, chill for a while and enjoy!

  • ¼ cup agave nectar or maple syrup
  • 1 tbsp cocoa powder
  • ¼ tsp vanilla or rum extract
