Add cacao butter to a microwave safe dish and microwave until completely melted. Transfer to a medium bowl and add cacao powder, stevia, and salt. Using a hand mixer, beat until completely smooth, for 2-3 minutes on medium speed. Stir in chopped almonds and add vanilla extract. Mix well again.
Line a small baking pan with some parchment paper (optionally, use chocolate molds). Pour the mixture in the prepared pan. Using a spoon or a kitchen spatula, flatten the surface as evenly as possible. Sprinkle with chopped almonds and refrigerate for 1 hour.
When done, cut into 4 equal pieces and serve.
Easy and delicious – this fantastic sugar-free vegan almond bark is ready in less than ten minutes and definitely worth trying. It's made with stevia instead of regular sugar which makes it an excellent option for all of us trying to lose some weight before the summer.
Zen spirit cacao powder gives this fabulous treat a mind-blowing chocolate aroma while chopped almonds add a bit of crunchiness and complete the flavor.
There are two ways to prepare this almond bark – stovetop or microwave as an easier option. If using a stove top, make sure to melt the butter over medium-low heat and then reduce the heat to low and then add the remaining ingredients, stirring constantly. However, a microwave will do an excellent job so there is really no need to spend any extra time to prepare it.
Optionally, add some other chopped nuts of choice and sprinkle with whatever sounds good to you. Enjoy!
