Ingredients

  • For the crust:
  • 1 1/3 cup almond flour
  • ¼ cup erythritol
  • 2 tbsp coconut flour
  • 1 tsp Zen Spirit maca powder
  • 3 tbsp butter
  • 2 tsp water
  • 1 tsp vanilla extract
  • For the filling:
  • 1 cup strawberry juice, unsweetened
  • ½ cup erythritol
  • 3oz strawberry jello mix, sugar-free
  • 2 lbs strawberries

Utensils

  • Food processor
  • 9-inch round tart pan

DIRECTIONS

  • Preheat the oven to 350°F. Generously coat a 9-inch round tart pan with cooking spray and set aside.

  • In a food processor, combine together almond flour, erythritol, coconut flour, Zen Spirit maca powder, butter, water, and vanilla extract. Process until crumbly and slightly sticky mixture has been formed.

  • Transfer the mixture to the prepared tart pan and press with your hands to form the crust. Bake for 12 minutes. When done, remove from the oven and cool to room temperature.

  • Meanwhile, combine together strawberry juice and erythritol. Mix well and gently bring to simmer over medium heat. Add strawberry jello mix and cook for 5 minutes, mixing constantly. When the mixture has slightly thickened, add strawberries and carefully mix. Remove from the heat and cool for a while.

  • Pour the strawberry mixture into the tart pan and cool completely. Refrigerate overnight before serving.

A sugar-free strawberry tart is made with gluten-free, low carb almond flour crust and delicious strawberry jello filling. Preparing the crust requires a couple of simple ingredients you simply have to pulse in your food processor until crumbly but slightly sticky so the mixture can hold together when pressed down onto the bottom of your tart pan. Then, all you have to do is briefly bake the crust for 10-12 minutes or until lightly golden.


For the filling, you will need a bottle of high-quality unsweetened strawberry juice (you can even squeeze your own fruit) and a box of sugar-free jello mix (strawberry-flavored ones will also be great for the tart filling).

When done, refrigerate the tart for at least 4 hours before serving but preferably overnight for the best results. Optionally, decorate with some more fresh fruit, lemon/lime slices, or drizzle with strawberry sauce. Enjoy!
