Ingredients

  • 21oz chocolate
  • 1 ½ cup cacao butter
  • 1 ½ tsp Zen Spirit maca powder
  • ¼ tsp salt
  • 8 eggs

  • 9-inch springform pan
  • Hand mixer
  • Cooking spray

DIRECTIONS

  • Preheat the oven to 350°F. Coat a 9-inch springform pan with cooking spray and set aside.

  • In a large bowl, combine together chocolate, cacao butter, Zen Spirit maca powder, and salt. Microwave until completely melted, stirring every 20-30 seconds. Remove from the microwave and cool for a while.

  • Meanwhile, add eggs to a medium bowl. Using a hand mixer, beat well on medium speed until they double in size. Pour ½ of the egg mixture into the chocolate mixture and beat well using a hand mixer. Once the mixture is completely smooth, add the remaining eggs and beat well again. Make sure the chocolate mixture is chilled to room temperature to prevent the eggs from cooking in hot chocolate.

  • Transfer the mixture to the prepared baking pan and bake for 30-40 minutes or until a toothpick inserted in the middle comes out clean.

  • When done, remove from the oven and cool completely. Transfer to the refrigerator for at least 4 hours (preferably overnight) before serving. Garnish with strawberries, sour cherries, and coconut flakes before serving.

You can also replace milk chocolate with dark chocolate without any sugars added – a bit healthier version that won't affect much the flavor. As for the cacao butter, make sure to look for a high-quality pack you can find. You can also add a teaspoon of vanilla extract to enhance the flavor of maca powder but that's completely optional.

The cake is best when served completely chilled. Cool to room temperature and then refrigerate preferably overnight. Finally, garnish with some fresh fruits (especially strawberries which go perfectly with chocolate), flaked coconut or cacao nibs. Enjoy!
