Ingredients

  • 1 ¾ cup all-purpose flour, gluten-free
  • 1 cup brown sugar
  • 1 cup soy milk
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • ½ cup vegan melted butter
  • 1 tbsp apple cider vinegar
  • 1 tsp rum extract
  • For the frosting:
  • 3 cups powdered sugar
  • 1 tbsp Matcha Green Tea powder
  • 1/3 cup vegan melted butter
  • 4 tbsp soy milk

Utensils

  • Stand mixer,
  • Mixing bowl,
  • Hand whisker,
  • Cupcake pan with cupcake liners,
  • Ladle spoon

DIRECTIONS

  • Preheat the oven to 350 degrees. Line a cupcake tray with cupcake liners and set aside.

  • Combine all-purpose flour, baking soda, sugar, and salt in a large mixing bowl. Stir until combined and set aside.

  • Gradually add soy milk, rum extract, vegan butter, and vinegar. Mix using a hand whisker until you get a nice smooth butter with small lumps.

  • Using a ladle spoon, pour the batter into prepared cupcake trays.

  • Bake for 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

  • When done, remove from the oven and cool completely. Meanwhile, prepare the frosting. In a stand mixer bowl, combine all frosting ingredients and mix until creamy. Using a piping bag, pipe the mixture onto the cupcakes. Serve immediately.

This recipe uses gluten-free all-purpose flour in combination with brown sugar, soy milk, and some rum extract for the additional flavor which gives this recipe a special holiday touch. However, if you're after some more traditional flavors, feel free to skip the rum extract and go for some vanilla or cherry extracts.

When it comes to toppings, you can use my favorite option which is intense green matcha topping based on powdered sugar, soy milk, and some vegan butter.

That is completely optional though. You can add a tablespoon of matcha in your dough and top your cupcakes with some fresh fruit, strawberry jam, or even coconut cream.
