If you're not sure how to add some valuable nutrients through wonderful desserts, these nice and tender rum cupcakes are your answer! They are completely gluten-free, vegan-friendly, and so amazingly easy that you'll be making them a lot.
This recipe uses gluten-free all-purpose flour in combination with brown sugar, soy milk, and some rum extract for the additional flavor which gives this recipe a special holiday touch. However, if you're after some more traditional flavors, feel free to skip the rum extract and go for some vanilla or cherry extracts.
When it comes to toppings, you can use my favorite option which is intense green matcha topping based on powdered sugar, soy milk, and some vegan butter.
That is completely optional though. You can add a tablespoon of matcha in your dough and top your cupcakes with some fresh fruit, strawberry jam, or even coconut cream.

As I said earlier, I love the specific rum flavor of these cupcakes. They are perfect for different holidays and family get-togethers. The unique green topping can be a handy base for different toppings or even Christmas decorations. Make a whole lot of these cupcakes and get your kids to help with decoration. Enjoy!
