Ingredients

  • For the puffs:
  • ½ cup butter
  • 1 cup water
  • 1 tsp sugar
  • ½ tsp salt
  • 1 cup all-purpose flour
  • ½ cup butter

  • For the raspberry filling:
  • ½ cup cream cheese
  • ½ cup whipping cream
  • 2 tsp Zen Spirit maca powder
  • 1 tsp raspberry extract
  • ¾ cup frozen blueberries
  • ¼ cup sugar
  • 1 ½ cup raspberries

  • Piping bag with a star tip

DIRECTIONS

  • Preheat the oven to 375°F. Line a large baking sheet with some parchment paper and set aside. Heat a large pan over medium heat. Add butter, water, sugar, and salt. Mix all well allowing

  • the butter to melt completely. Stir in flour and cook for a couple of minutes, stirring constantly. Remove from the heat and cool slightly.

  • Transfer the mixture to a medium bowl. Add eggs, one at the time, beating constantly until completely smooth. Transfer to a large piping bag with a star tip.

  • Pipe 1 ½ -inch rounds onto each prepared pan. Bake for 30 minutes. When done, remove from the oven and cool for a while.

  • Meanwhile, in a medium bowl, combine together cream cheese, whipping cream, Zen Spirit maca powder, raspberry extract, frozen blueberries, and sugar. Using a hand mixer, beat well until light and fluffy. Fold in raspberries and set aside. Slice chilled puffs in half. Stuff each with the prepared mixture and serve.

When preparing these lovely raspberry and maca cream puffs, there are some basic steps to follow and you won’t have any problems. Make sure to preheat your stove to medium heat, especially when adding the flour. Otherwise, the mixture might start sticking to the pan or even burn. Also, make sure to vigorously stir the mixture all the time to prevent lumps. Once you have prepared the basic mixture for the puffs, you will have to cool it slightly before adding the eggs. If you add the eggs directly to the pan, they will start to cook as soon as they touch the hot mixture.

Now that you have your perfectly smooth puffs mixture, simply transfer to a large piping bag with a star tip. Pipe about 1 ½ inch rounds onto the baking sheet and bake for around 30 minutes or they have tripled in size and until lightly golden brown on top. Then just simply cool your puffs before adding the filling.


As for the filling, there is nothing that can really compare to light and fluffy mixture of cream cheese and whipping cream combined with Zen Spirit maca powder and berries. Add some raspberry extract to enhance the overall flavor and color, stuff the chilled puffs and serve. Enjoy!
