Melt dark chocolate. Add chocolate and 2 teaspoons of coconut oil in a heatproof bowl. Sit over a pan of barely simmering water (a bain marie) and allow the chocolate to melt, stirring occasionally.
Once the chocolate has melted, gently pour over the bars. If you’re using a pan, spread the chocolate into an even layer with a kitchen spatula.
Cover the bars and refrigerate for at least 3 hours (preferably overnight), or until the bars are firm and the chocolate is set.
Remove the pan from the fridge. Using a sharp knife, cut into 8 bars.
Bars can be stored in a dish or individually wrapped. Keep refrigerated up to a month for a firmer texture or unrefrigerated up to a week for a softer texture. Enjoy!
