Matcha Coconut Fudge with Vanilla Extract

A delicious dessert based on fresh and unsalted goat's cheese sounds too good to be true, right?

Well, with these matcha coconut fudge bites, you will discover what a couple of simple ingredients combined with goat's cheese can create when together.

This matcha coconut fudge has a tender texture which is completed with the bittersweet taste of matcha green tea powder and shredded coconut.

Adding one teaspoon of vanilla will definitely add some extra aroma you will enjoy. However, this fudge would also be perfect with a bit of rum extract (or even a few drops of real rum).

Matcha coconut fudge can be stored and refrigerated up to a week in air tight containers. Have fun!
