Ingredients

  • 2 cups gluten-free rolled oats
  • 1/2 tbsp Maca Powder
  • 2 medium-sized ripe bananas, mashed
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free strawberry jam
  • 1/2 cup fresh strawberries

Utensils

  • Baking pan

DIRECTIONS

  • Preheat your oven to 375F (190C). Line a 6x6 inch baking pan with some parchment paper and set aside.

  • Place half of the oats into a food processor and process until fine mince and flour-like texture. Add bananas, maple syrup, and vanilla extract. Process until completely combined and then add the remaining oats. Continue to mix until almost smooth dough is formed.

  • Transfer 2/3 of the dough into the prepared baking pan. Using a kitchen spatula, flatten the surface as evenly as possible. Make an even layer with strawberry jam, making sure to leave about ¼ -inch of space around the edges to prevent the jam from burning.

  • Spoon remaining oat mixture on top. Bake for 30 minutes, until the center has set and the bars begin to turn golden brown. Remove from the oven and let them cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

  • Using a sharp knife, cut into 8 equal bars. Serve immediately or cool in the refrigerator for a while.
