Ingredients

  • 1 cup dark chocolate
  • 1/4 cup coconut oil
  • 1 1/2 tbsp maca
  • 1/4 cup peanut butter

  • Mini muffin tin
  • Muffin liners

DIRECTIONS

  • Line a 12-cup mini muffin tin with paper liners. Set aside. Place chocolate chips in a microwave-safe bowl. Microwave on half-power for 2 minutes. Remove from the microwave and stir well. Continue to cook on half-power for 20 seconds at a time, stirring between each, until the chocolate is completely smooth.

  • Add the coconut oil into the melted chocolate and stir to combine. Drop about 2 teaspoons of melted chocolate into each cupcake liner (enough liquid chocolate to cover the bottom). Cool in the refrigerator until completely firm.

  • Meanwhile, in a separate bowl, combine together maca powder and peanut butter. Stir until the mixture has completely combined. Set aside.

  • Remove the muffin tin from the refrigerator and add about two teaspoons of the maca mixture into each cup, leaving about 1/8 inch of space along the edge. Otherwise, the filling will show through when you add the final layer of chocolate on top. Also, make sure the peanut butter is not too thick because the top chocolate layer won’t seal around it.

  • Pour in the remaining melted chocolate making sure to cover the entire maca filling. Place back in the fridge and cool completely.

  • Dust some maca powder on top of each cup and sprinkle with your favorite toppings.
