Ingredients

  • For the galettes
  • 2 cups strawberries
  • ¼ cup coconut sugar
  • 1 tbsp maca powder
  • 1 tbsp cornstarch
  • 1 tsp lemon juice, freshly squeezed
  • ¼ tsp pink Himalayan salt
  • 1 piece pate brisee
  • For the vegan egg wash (Optional)
  • 1 tbsp aquafaba
  • 1 tbsp almond milk
  • 1 tsp sunflower oil
  • 1 tsp maple syrup

Utensils

  • Baking dish lined with some parchment paper
  • Stand mixer
  • Rolling pin
  • Plastic foil

DIRECTIONS

  • Place strawberries in a small saucepan and pour in about ½ cup of water. Stir in ¼- ½ agar powder and gently simmer for a couple of minutes, or until the mixture starts to thicken. Remove from the heat and set aside to cool.

  • Meanwhile, preheat the oven to 375 degrees F. Line some parchment paper over a baking sheet and set aside.In a medium-sized mixing bowl, combine strawberries, coconut sugar, cornstarch, maca powder, lemon juice, and salt. Mix until well combined. If the mixture is not thick enough, feel free to add about 1-2 tablespoons of flour.

  • Knead the pate brisee into a smooth ball. Divide into 4 equal pieces and place on a lightly floured work surface. Roll out 4 equal discs, about 1/8 inch thick. Scoop about 2 tablespoons of the strawberry mixture in the center of each crust, leaving about a 1-inch border. Pinch the border and fold it inside to form a galette.

  • Before baking, I like to brush my galettes with a nice vegan egg wash. Naturally, this is optional but it will give your galettes a nice golden-brown color.

  • Bake for 1 hour. When done, transfer to a wire rack and cool completely.

  • Optionally, sprinkle with some powdered stevia before serving and enjoy!

The term gallete is usually described as ''large cookies'', which is just partly true. Beautiful galettes are a scrumptious dessert for any kind of formal and casual gathering.

This worldwide famous French pastry, usually filled with fruits, is very similar to classic pie but with different look – the pastry dough is wrapped around the filling and forms a flower-shaped crusty cake. Its sweet and tender filling can be made with some seasonal fruit, your favorite jam, or a combination of both and it all comes wrapped in the best possible dough recipe – Pate Brisee.

For this beautiful galette recipe, you can use fresh strawberries. In that case, you will only have to slice your strawberries, sprinkle them with some coconut sugar (and maybe a pinch of cinnamon or freshly grated ginger) and you’re good to go.

I personally prefer to boil my strawberries for 2-3 minutes because this will give them a nice and tender structure you want to see in your pastry filling.
