Preheat oven to 410°F/210°C. Brush a 10-cup muffin tin with some oil and set aside.
In a medium bowl, mix together flour, Maca, baking soda, baking powder, flaxseed, and salt. Set aside.
In a separate bowl, whisk together sugar, oil, vanilla extract, and milk. Pour into the flour mixture and mix until well combined.
Scoop the muffin batter into the prepared muffin tin and optionally sprinkle each with almonds.
Bake for 5 minutes and then reduce the temperature to 350°F/180°C. Continue to bake for another 12-15 minutes or until a toothpick inserted in the center comes out clean.
Let muffins cool for 5-10 minutes before serving.
