Preparation: Preheat the oven to 350 degrees. Lightly brush a loaf pan with some oil and set aside.
In a medium bowl, combine together flour, sugar, maca powder, baking powder, salt, and orange zest. Set aside.
In a bowl of a stand mixer, beat together eggs, yogurt, and butter. Gradually add the flour mixture, beating constantly until a smooth batter. Finally, add blueberries and mix again.
Transfer the mixture to the prepared loaf pan and bake for 1 hour and 10 minutes.
When done, remove from the oven and cool to room temperature. Carefully remove the bread from the pan and serve.
There is nothing better than a delicious combination of different berries, maca powder, and orange or lemon zest in sweet pastry recipes.
This time I have decided to add frozen blueberries because I love the fantastic purple color they give when the bread is sliced and ready to be served. Some fresh or frozen cranberries, raspberries, or blackberries are also an excellent choice for your sweet maca bread but also a handful of finely chopped nuts which will add a nice touch of crunchiness.
Once the bread is done and completely chilled, it can be stored in air-tight containers or Ziploc bags for days which is just perfect for a delicious breakfast or a quick snack. Goes perfectly with freshly squeezed orange juice, a glass of milk, or tea. Give it a try!
