Ingredients

  • 1 ¾ cups gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tbsp Maca Powder
  • 1/4 teaspoon salt
  • 1/4 cup + 2 tablespoons warm water
  • 2 tablespoons ground flax
  • 1 1/2 cups mashed ripe banana (4-5 bananas)
  • 1/3 cup coconut oil, melted
  • 3/4 cup cane sugar
  • 1 1/2 teaspoons vanilla extract

DIRECTIONS

  • Preheat oven to 350°F. Spray a loaf pan with nonstick cooking spray and set aside.

  • In a medium-sized bowl, mash bananas. Set aside.

  • In a separate bowl, whisk together flaxseed, vanilla, sugar, oil, and water. Add bananas and mix until completely combined.

  • In a large mixing bowl, mix together flour, baking powder, baking soda, maca powder, and salt.

  • Stir the wet ingredients into the dry ingredients until combined. Pour the batter into the prepared loaf pan, top with sliced banana, and bake for 50-60 minutes until the center is firm.

  • When done, remove from the oven and cool to a room temperature. Remove the bread from the pan and slice. Serve!

Being a huge banana fan, I usually end up with a dozen overripe bananas taking a lot of space in my fridge. For a while now, I’ve been looking for a perfect banana bread recipe (and who didn’t??) because my entire family is absolutely in love with it!

After a long search, I have discovered something that turned out to be my number one banana bread recipe. It’s tender on the inside and lightly crispy on the outside with the best possible feature – it can be combined with maca powder and that is just fantastic!

A simple combination of a couple of healthy ingredients makes this maca banana bread a truly valuable breakfast, snack or dessert.

You can wrap this bread in a large piece of plastic foil and keep it for a couple of days – its texture will remain exactly the same which is awesome. Grab a couple of slices, spread your favorite jam, and enjoy!
