Preheat oven to 350°F. Spray a loaf pan with nonstick cooking spray and set aside.
In a medium-sized bowl, mash bananas. Set aside.
In a separate bowl, whisk together flaxseed, vanilla, sugar, oil, and water. Add bananas and mix until completely combined.
In a large mixing bowl, mix together flour, baking powder, baking soda, maca powder, and salt.
Stir the wet ingredients into the dry ingredients until combined. Pour the batter into the prepared loaf pan, top with sliced banana, and bake for 50-60 minutes until the center is firm.
When done, remove from the oven and cool to a room temperature. Remove the bread from the pan and slice. Serve!
Being a huge banana fan, I usually end up with a dozen overripe bananas taking a lot of space in my fridge. For a while now, I’ve been looking for a perfect banana bread recipe (and who didn’t??) because my entire family is absolutely in love with it!
After a long search, I have discovered something that turned out to be my number one banana bread recipe. It’s tender on the inside and lightly crispy on the outside with the best possible feature – it can be combined with maca powder and that is just fantastic!
A simple combination of a couple of healthy ingredients makes this maca banana bread a truly valuable breakfast, snack or dessert.
You can wrap this bread in a large piece of plastic foil and keep it for a couple of days – its texture will remain exactly the same which is awesome. Grab a couple of slices, spread your favorite jam, and enjoy!
