Preheat the oven to 425°F. Line a medium baking pan with parchment paper and set aside.
In a medium bowl, combine together almond flour, psyllium husk powder, baking powder, salt, and apple cider vinegar. Mix well and then add boiling water. Vigorously mix for a couple of minutes or until a sticky dough has been formed. Working with your hands, knead the dough to form a ball. Let it rest for 5 minutes.
Transfer the dough to the prepared baking pan. Flatten the dough with your hands to create a pizza crust. Poke the crust with a fork to prevent bubbling. Brush the edges with olive oil to prevent them from burning.
Bake for 10 minutes or until golden brown and firm.
Optionally, brush the crust with low-carb pizza sauce and sprinkle with shredded mozzarella or some other toppings of choice and bake for another 5 minutes.
