Ingredients

  • 6 eggs, separated
  • 1 ½ cup almond flour
  • ¼ cup butter, melted
  • 3 tsp baking powder
  • ½ tsp salt
  • 2 tbsp Zen Spirit Psyllium Husk Powder
  • Golden flaxseed, optional

Utensils

  • 8x4 loaf pan
  • Parchment paper
  • Mixing bowl
  • Hand mixer

DIRECTIONS

  • Preheat the oven to 375°F. Grease an 8x4 inch loaf pan with cooking spray and line with parchment paper. Set aside.

  • Add egg whites to a medium bowl. Using a hand mixer, beat on medium speed until soft peaks form. Add almond flour, melted butter, baking powder, salt, and psyllium husk powder. Continue to beat until fully incorporated.

  • Transfer the mixture to the prepared loaf pan. Optionally, sprinkle with flaxseed and bake for 30 minutes.

  • When done, remove from the oven and cool to room temperature.

Reducing carbs means giving up the bread and all of those other baked goods we’re all addicted to which is why most of us find it too hard to follow. However, it really doesn’t have to be like that.

Having a good low-carb bread recipe is probably the most important thing when going on a low-carb diet. With only 1.7g of net carbs per serving, this fantastic bread is everything you need for a decent meal. It’s based on almond flour, eggs, butter, and Zen Spirit psyllium husk powder that will prevent a soggy texture most of the low-carb bread recipes have. Adding a teaspoon of baking soda is completely optional but it will add some extra volume and give you some excellent results.

We have decided to sprinkle this bread with some golden flaxseeds before baking but feel free to add some seeds (or even finely chopped nuts) in the mixture before baking. Play around with various different options until you have found your favorite one.

Once the bread is done, allow it to cool to room temperature before serving. It really needs to thicken before you can slice it. Store in air-tight containers or a large Ziploc up to a week (the bread will remain the same which is quite awesome as well!). Enjoy!
