Ingredients

  • 1 ½ cup sugar
  • 8oz cream cheese
  • ½ cup butter
  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 ½ tsp baking powder
  • 2 tbsp Zen Spirit maca powder
  • 1 ½ tsp vanilla extract
  • ½ tsp lemon extract
  • 8 eggs
  • For the glaze:
  • ½ cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

DIRECTIONS

  • Preheat the oven to 350°F. Spray a medium loaf pan with cooking spray and line with parchment paper. Set aside.

  • In a medium bowl, combine together sugar, cream cheese, and butter. Using a hand mixer, beat well until completely smooth. Set aside.

  • In a bowl of a stand mixer, add almond flour, coconut flour, baking powder, Zen Spirit maca powder, vanilla extract, lemon extract, eggs, and the previously prepared cream cheese mixture. With a paddle attachment on, beat well until completely smooth.

  • Transfer the mixture to the prepared loaf pan and bake for 30 minutes or until a toothpick inserted in the middle comes out clean.

  • Remove the cake from the oven and cool to room temperature. Carefully remove from the pan and set aside.

  • Meanwhile, in a medium bowl, combine together heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer, beat on high speed until firm peaks form. Spread the glaze over the cake and serve.

This gluten-free maca Starbucks lemon cake is made with almond and coconut flour instead of regular all-purpose flour which gives this unique dessert its distinctive and wonderful flavor and quite a unique texture that simply melts in your mouth. You simply have to combine a couple of simple ingredients together and bake until done. The best way to test this is by using an old trick with a toothpick. Poke the cake with a toothpick and if it comes out clean, your cake is ready. Remove from the oven and cool for a while before trying to remove it from the loaf pan. Otherwise, the tender texture of this delicious cake might stick to the pan so you won’t be able to remove it.

Now, you simply have to coat the cake with some light and fluffy glaze based on whipped cream, powdered sugar, and some vanilla extract. Cool everything for a while before serving. You can also refrigerate the cake for a couple of hours before trying to slice it.
Finally, if you wish to prepare an even healthier version of this cake, you can replace the regular sugar with some sweetener such as erythritol, stevia or xylitol.
