Preheat the oven to 350 degrees. For this recipe, you will have to soak the dates the night before or simply boil them for 10-15 minutes. This will give you a perfect tender texture you need. Place dates in a powerful blender along with some of the water.
Blend until a smooth puree and transfer to a large mixing bowl along with minced almonds, shredded coconut, olive oil, almond milk, baking soda, and matcha green tea powder. Using a kitchen spatula, mix well until smooth and fully incorporated.
Line some parchment paper over a baking dish and place the mixture in it. Flatten the surface with a spatula and bake for 15 minutes. When done, remove from the oven and cool to a room temperature.
Meanwhile, prepare the topping. Microwave the cocoa butter for 1 minute or until melted. Place in a small bowl along with almond milk and maple syrup. Pour the mixture over chilled brownies and top with coconut and berries.
Cool completely and cut into squares. Optionally, decorate with rose petals.
