Ingredients

  • 1 cup soft dates, boiled
  • 1 cup almonds, minced
  • 6 tbsp shredded coconut
  • 4 tbsp olive oil
  • 3 tbsp almond milk
  • 1 tsp baking soda
  • 2 tbsp matcha green tea powder
  • For The Topping:
  • 2 tbsp cocoa butter
  • 3 tbsp almond milk
  • 2 tbsp maple syrup
  • ¼ cup frozen strawberries and raspberries
  • 2 tbsp desiccated coconut

Utensils

DIRECTIONS

  • Preheat the oven to 350 degrees. For this recipe, you will have to soak the dates the night before or simply boil them for 10-15 minutes. This will give you a perfect tender texture you need. Place dates in a powerful blender along with some of the water.

  • Blend until a smooth puree and transfer to a large mixing bowl along with minced almonds, shredded coconut, olive oil, almond milk, baking soda, and matcha green tea powder. Using a kitchen spatula, mix well until smooth and fully incorporated.

  • Line some parchment paper over a baking dish and place the mixture in it. Flatten the surface with a spatula and bake for 15 minutes. When done, remove from the oven and cool to a room temperature.

  • Meanwhile, prepare the topping. Microwave the cocoa butter for 1 minute or until melted. Place in a small bowl along with almond milk and maple syrup. Pour the mixture over chilled brownies and top with coconut and berries.

  • Cool completely and cut into squares. Optionally, decorate with rose petals.

They take less than one hour to prepare which is absolutely fantastic for such a mind-blowing dessert. And the best part? A simple decoration with some rose petals and desiccated coconut transforms these delicious brownies into luxurious treats for holidays and fancy dinner parties.

These healthy coconut matcha brownies are a wonderful combination of gently boiled dates, minced almonds which can be replaced with some other nuts, and lots of my favorite coconut. For this recipe, I used extra virgin olive oil. However, coconut oil or cacao butter will work perfectly as well.
