Ingredients

  • 1 cup coconut butter
  • 3 tbsp cocoa powder, unsweetened
  • ¼ cup maple syrup
  • 1 tbsp maca powder
  • ¼ cup shredded coconut
  • ¼ tsp salt
  • 1 tsp vanilla extract

Utensils

  • Small baking dish
  • Parchment paper
  • Mixing bowl

DIRECTIONS

  • Line a small baking dish with some parchment paper and set aside.

  • Cut the coconut butter into chunks and microwave for 1-2 minutes or until completely melted. Transfer to a bowl and stir in the remaining ingredients. Transfer the mixture to the prepared baking dish and refrigerate for 2-3 hours.

  • Store in airtight containers for 3-4 weeks.

Now, this is what I call a super easy dessert that has been my lifesaver so many times. It takes only a couple of simple ingredients to get a fantastic snack that can stay in the refrigerator for a couple of weeks (even longer in the freezer) and serve as an extremely healthy snack to go.

Coconut butter (which can also be replaced with coconut oil) is the most important ingredient in these bars because it holds the remaining ingredients together when chilled in the refrigerator. I like to use maple syrup as a sweetener but naturally, you can replace it with agave or coconut nectar – this really depends on your taste.

However, I find that a combination of good old maple syrup and unsweetened cocoa powder gives me the best 'chocolate' taste in so many different desserts (and these bars are not an exception). Add some shredded coconut to wrap things up and you're good to go – combine, chill, and serve! As simple as that.

If you’re using coconut butter, make sure to remove it from the refrigerator for a while before use – this will soften the butter just enough and will prevent unpleasant splash in the microwave and a rather difficult cleaning afterward (this rule actually applies for most fats you’re planning to melt in your microwave).

Optionally, top these bars with some coconut flakes or finely chopped almonds before refrigerating them, or drizzle them with some melted chocolate after. Whatever you choose, I’m sure this easy recipe will become one of your favorite ones!
