Ingredients

  • 1 ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, room temperature
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp Zen Spirit chia seeds
  • 1 cup Greek yogurt

Utensils

  • Medium springform pan
  • Parchment paper
  • Two mixing bowls
  • Hand mixer

DIRECTIONS

  • Preheat the oven to 350°F.

  • Spray a medium springform pan with cooking spray and line with parchment paper. Set aside.

  • In a medium bowl, combine together flour, baking powder, baking soda, and salt. Set aside.

  • In another bowl, beat together butter and sugar until fully incorporated and creamy. Add eggs and mix well again. Finally, add lemon juice, lemon zest, the previously prepared flour mixture, Zen Spirit chia seeds, and Greek yogurt.

  • Pour the mixture into the prepared springform pan. Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean.

  • Remove from the oven and cool to room temperature.

This delicious cake is an excellent addition to your morning coffee or afternoon tea. A lovely combination of refreshing lemons and healthy chia make this simple dessert a true treat for everyone.

It's perfectly moist and sweet with the best possible spongy texture so it's really doesn't require any frosting or topping. This makes a lovely chia lemon cake extremely easy to make – all you have to do is combine a few basic ingredients in a bowl, add enough lemon juice and lemon zest for its unique aroma and then finish everything with just a right amount of chia seeds – and your cake is good to go. Sometimes we like to sprinkle the cake with some powdered sugar or desiccated coconut just before serving. Enjoy!
