Ingredients

  • ½ cup coconut oil
  • ¼ cup peanut butter
  • 2 tbsp maple syrup
  • 1 cup wholemeal self-raising flour
  • 1 cup rolled oats
  • ½ cup goji berries
  • 1/3 cup Zen Spirit chia seeds
  • ½ cup desiccated coconut
  • ½ tsp baking soda
  • ½ cup pistachios

Utensils

  • Mixing bowl
  • Hand mixer
  • Large baking sheet
  • Parchment paper

DIRECTIONS

  • Preheat the oven to 350°F. Line a large baking sheet with parchment paper and set aside.

  • In a small saucepan, combine together coconut oil, peanut butter, and maple syrup. Cook for 2-3 minutes over low heat. Remove from the heat and cool for a while.

  • ½ tsp baking soda

    In a medium bowl, add wholemeal flour, rolled oats, goji berries, Zen Spirit chia seeds, desiccated coconut, baking soda, and pistachios. Finally, pour in the oil mixture.

  • ½ cup pistachios

    Using a hand mixer, beat well until fully incorporated. For each cookie, drop about ¼ cup of the mixture onto the prepared baking sheet. Working with your hands, shape cookies and bake for 15 minutes.

  • When done remove from the oven and transfer to a wire rack to cool. Serve.
