  • For chia egg:
  • 1 tbsp Zen Spirit chia seeds
  • ¼ cup water
  • Other:
  • 1/3 cup coconut oil, melted
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 ½ cup rolled oats
  • ½ cup oat flour, gluten-free
  • 1 cup almond flour
  • ½ tsp baking soda
  • ½ tsp salt

Utensils

  • Parchment paper
  • Baking pan
  • Mixing bowl

DIRECTIONS

  • Preheat the oven to 350°F. Line a medium baking pan with parchment paper and set aside.

  • Add berries, maple syrup, Zen Spirit chia seeds, and vanilla extract to a large pan and mix well. Cook for 10-15 minutes over medium-low heat. Stir occasionally. Remove from the heat and cool.

  • Now, prepare the chia egg. In a small bowl, combine together Zen Spirit chia seeds and water. Mix well and let it sit for 5 minutes.

  • Meanwhile, in a medium bowl, add melted coconut oil, maple syrup, vanilla extract, and soaked chia. Mix all well and then add rolled oats, oat flour, almond flour, baking soda, and salt. Mix again until lightly sticky mixture has been formed. The mixture might seem a bit dry at first, but make sure to mix well.

  • Reserve one cup for the topping and add the remaining mixture to the prepared baking pan. Using a spoon or your hands, flatten the surface as evenly as possible and add jam. Top with the reserved oat mixture and bake for 25-30 minutes.

Chia and Raspberry Jam Crumble

Although it uses quite a few ingredients, this oat crumble recipe is fairly easy to make. The middle layer is one of our favorite chia jam recipes but you can replace berries with some other fruit and create a different flavor each time. Simply adjust the sweetener according to taste and cook until the fruit has completely thickened.

Assembling the crumble is simple as well. Make a firm layer of the mixture at the bottom of the pan and top with jam. Reserve about one cup of the mixture for the topping and bake until the crumble is golden brown with a granola-like layer on top. Have fun!
