Ingredients

  • 3 egg whites
  • 1 cup powdered sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 1 medium pineapple
  • Brown sugar

DIRECTIONS

  • In a bowl of a stand mixer, combine together egg whites, powdered sugar, cornstarch, and vanilla extract. Beat on high speed until firm peaks form. Remove the whipped cream from the bowl and transfer to a piping bag.

  • Slice pineapple into 1-inch thick slices. Sprinkle with brown sugar and caramelize with Zen Spirit culinary torch.

  • Top with whipped cream and finish with sliced strawberries. Serve immediately.

As for the whipped cream topping, you can prepare your own using some egg whites and powdered sugar (which can also be replaced with powdered erythritol or stevia if you wish to avoid sugar). You can also prepare the topping with heavy whipping cream or simply use the store-bought one.

This delicious recipe is a great opportunity to use fresh strawberries-especially if you're in a strawberry season. If not, you can replace them with some other fresh berries, figs, or finely chopped peaches. The choice is yours!
