Ingredients

  • 3 ½ cups self-rising flour
  • 1 ¼ cup sugar
  • 2 tbsp Zen Spirit chia seeds
  • 1 tsp salt
  • 2 eggs
  • ½ cup oil
  • 1 cup milk
  • For the chocolate frosting:
  • 3 ½ cups confectioners’ sugar
  • 1 cup Zen Spirit cacao powder
  • ½ cup milk
  • 12 tbsp butter, softened
  • 2 tsp vanilla extract
  • Other:
  • Pretzels, button-shaped chocolate such as M&M’s, round cookies of choice and chocolate sprinkles.

DIRECTIONS

  • Preheat the oven to 400°F.

  • In a large bowl, combine together flour, sugar, chia seeds, and salt. Mix well and add eggs, oil, and milk. Using a hand mixer fitted with dough hook attachments, beat well until a smooth batter has been formed.

  • Line 2x6-cup or 1x12-cup muffin tins with liners. Fill each cup about two-thirds full and bake for 20-25 minutes.

  • When done, remove from the oven and cool to room temperature. Transfer to a wire rack and cool completely. Meanwhile, prepare the frosting. In a large mixing bowl, add confectioners’ sugar and cacao powder. Mix well and then add milk, butter, and vanilla. Using a hand mixer, beat until completely smooth. Transfer the mixture to a large piping bag and set aside.

  • Now, cut of tops off each muffin and top with the frosting. Using a small paring knife, carefully spread the topping over muffins to create an even layer.

  • Top with cookies, pretzels, and button-shaped candies to create the face of each reindeer. Serve.

Chia Holiday Reindeer Cupcakes

These lovely reindeer cupcakes are fun to make and will definitely steal the show at your Christmas party. They are absolutely perfect to prepare with children as well as with grownups who will enjoy creating their little faces using nothing but some cookies, pretzels, and candies. You can also use red M&M’s for the nose and create adorable Rudolph cupcakes everybody will love.

If you don’t have self-rising flour, you can use your regular all-purpose flour and add three teaspoons of baking powder in it to get the same effect. You can also replace sugar with your favorite sweetener (this goes for the frosting as well) if you wish to reduce some sugars in this fabulous dessert. The choice is yours!
