The first thought of healthy almond and cocoa cookies probably won’t make you jump for joy but just like me, you’ll have a couple of those mostly because of the great nutrition they provide.
However, these soft cookies with the best, salted maca caramel topping will prove you wrong. They simply melt in your mouth while giving your body a daily dose of good fiber, vitamins, and minerals. Both – the base and the topping are based on dates which are a fantastic source of energy, healthy sugar, and good fiber.
This tender fruit is also rich in essential vitamins and minerals like calcium, iron, magnesium, potassium, zinc, vitamin A, vitamin K, niacin, folate, and thiamin. The dry part of the cookie base are finely minced almonds and unsweetened cocoa powder which perfectly neutralizes sweet dates.
They are extremely easy to make – all you have to do is simply combine the ingredients for the cookies in a food processor and cool the mixture while you prepare the salted maca caramel topping. Enjoy!

Salted maca caramel is your opportunity to experiment with your maca powder. I personally find two tablespoons to be quite enough. But in that case, you will have to chill the topping for a while in order to get a thick mixture that won’t fall off the cookies. You can easily solve this by adding more maca powder to the basic recipe and processing the mixture until a fine and smooth consistency which can be used immediately. The choice is completely up to you.
