Summer is a perfect time of the year to eat lean, healthy foods that are bursting with colors, flavors, and nutrients. This amazing apricot salad combined with fiber-rich avocado and powerful spinach is by far the best way to clean your body from all the toxins accumulated during the year. It is also an excellent side dish to various fish or meat recipes and goes great with a glass of wine.
This recipe contains a small amount of crumbled feta but you can replace it with some smoked tofu for the vegan version and optionally sprinkle with some finely chopped almonds for a bit of a nutty flavor. If you don’t have fresh apricots on hand, dried ones will also do a great job.
As for the dressing, a nice drizzle of olive oil and freshly squeezed lime juice is just perfect. However, a small amount of honey mustard dressing will complement a mild flavor of apricots and give this beautiful salad its final touch.
