  • For the first layer:
  • 2/3 cup all-purpose flour
  • 1/3 cup Zen Spirit cacao powder
  • 1/3 tsp instant coffee
  • 1 cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1/3 cup butter, melted
  • 2 tbsp oil
  • 2 eggs, beaten
  • 1 tsp vanilla extract

  • For the second layer:
  • 2 cups confectioners' sugar
  • ¼ cup butter, softened
  • 3 tbsp rum (can be replaced with one teaspoon of rum extract)
  • 2 tbsp Zen Spirit matcha green tea powder

  • For the third layer:
  • 10oz dark chocolate
  • 3 tbsp rum (can be replaced with one teaspoon of rum extract)
  • 2 tbsp heavy cream
  • ½ tsp instant coffee


  • Square baking pan
  • Cooking spray
  • Stand mixer
  • Whisker
  • Microwave-safe bowl


  • Preheat the oven to 350 degrees F. Spray a medium square pan with some cooking spray and set aside.

  • In a medium bowl, mix together flour, salt, and baking powder. Set aside.

  • In a separate bowl, combine together melted butter, oil, instant coffee, and cacao powder. Mix until completely smooth and then add sugar and beaten eggs. Continue to mix until smooth batter and then gradually add flour, mixing constantly. Transfer the batter in the prepared baking dish. Bake for about 25-30 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and cool to a room temperature.

  • Now, prepare the second layer. In a bowl of a stand mixer, combine together confectioners' sugar, matcha green tea powder, and butter. With a paddle attachment on, beat well until completely smooth. Now, add rum and mix again. Spread the mixture over chilled brownies and refrigerate for 30 minutes.

  • Meanwhile, in a medium microwave-safe bowl, combine together chopped chocolate, rum, heavy cream, and the remaining coffee. Microwave until chocolate has completely melted. Remove from the microwave and mix well until completely smooth.

  • Top brownies with melted chocolate and refrigerate for at least one hour. Carefully, slice into 12 equal brownies and serve.

Triple-layered Matcha rum brownies with a delicate taste of rum and coffee are one of those desserts you wish to keep for special occasions like birthday parties, holidays, or anniversaries.

These brownies are a fantastic combination of a delicious chocolate layer with a gentle touch of coffee flavor and a creamy matcha layer with a heavy rum aroma everybody loves in desserts. To make things even more interesting, finish these brownies with a nice amount of chocolate topping in which you can add some more rum and/or coffee (I personally have decided to go with both but you can experiment with this depending on your taste).

If you're serving this dessert to kids, you can simply replace the real rum with some rum extract – you won't feel the difference when it comes to the flavor and your kids will be able to enjoy these fantastic brownies. Have fun!
