Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup sugar (can be replaced with natural cane sugar)
  • 2 eggs
  • 2 tbsp honey
  • ½ cup butter, softened
  • 2 tsp vanilla extract
  • 2 tbsp matcha green tea powder
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • ½ cup almonds, chopped

  • Ice cream scoop
  • Large baking sheet

DIRECTIONS

  • In a large mixing bowl, combine flour, sugar, matcha green tea powder, baking soda, baking powder, and salt. Mix well and add eggs and butter. Beat well on high speed, for 2 minutes. Gradually add honey and vanilla extract. Finally, add almonds and continue to beat until fully incorporated, for 2-3 minutes.

  • Preheat the oven to 350 degrees. Line some parchment paper over a baking sheet. Scoop out about two tablespoons of the mixture onto a baking sheet, 2 inches apart.

  • Bake for 12-13 minutes. Remove from the oven and chill to a room temperature before serving.

  • These cookies can stand in a dark place up to a week so you can prepare a couple of batches and enjoy them every day.

Every time I pour myself a glass of warm matcha milk, I start looking for some cookies to go along with it. So I came up with the idea of combining matcha green tea powder with my favorite cookie recipe. The result? Absolutely perfect green cookies with a beautiful chewy texture my entire family adores!
