Ingredients

  • 4oz almond flour
  • 4.5oz erythritol
  • 1.7oz Zen Spirit Cacao Powder
  • 1 ½ tbsp. Zen Spirit Psyllium Husk Powder
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 8oz cream cheese
  • 4 eggs
  • 4oz melted butter
  • For the frosting:
  • 8oz cream cheese
  • 8oz butter, softened
  • 4.5oz peanut butter
  • 1.7oz powdered erythritol
  • 2 tsp vanilla extract
  • Optional topping:
  • Crushed Oreos (use low-carb cookies if avoiding sugar), redcurrant, rosemary

Utensils

  • Hand mixer
  • 2 mixing bowls
  • 7inch springform pan
  • Cooking spray

DIRECTIONS

  • Preheat the oven to 350°F. Generously coat a 7inch springform pan with some cooking spray and set aside. In a medium bowl, combine together almond flour, erythritol, cacao powder, psyllium husk powder, baking powder, and salt. Set aside.

  • In another bowl, add cream cheese, eggs, and melted butter. Using a hand mixer on medium speed, beat well until completely smooth. Add the dry mixture and beat well again until fully incorporated.

  • Add half of the mixture to the prepared springform pan. Using a lightly greased kitchen spatula, flatten the mixture as much as you can to create the crust.

  • Bake for 15-20 minutes. Remove the crust from the oven and cool to room temperature before carefully removing it from the pan. Repeat the process with the remaining dough to create another crust.

  • Meanwhile, prepare the frosting. In a medium bowl, add all frosting ingredients. Using a hand mixer fitted with whisking attachments, beat the mixture well on medium speed until completely smooth and creamy. Spread some of the mixture over one crust and top with another one. Use the remaining frosting to generously coat the entire cake.

  • Optionally, decorate with some crushed cookies, redcurrants, and rosemary.

The crust for this guilt-free dessert also contains a good amount of healthy Zen Spirit cacao powder for the best chocolate flavor you can possibly imagine.

You will need some time to put the entire cake together because you have to make everything from a scratch but the end results will definitely be worth it! You can also reduce the cooking time by using 2 springform pans for crusts and baking them at the same time but you might end up with crusts that are not entirely perfect and evenly baked so investing another 15-20 minutes will probably be a good idea.

The frosting is another simple yet delicious combination of cream cheese and peanut butter for all peanut butter lovers out there. If you’re not a huge fan, you can simply replace the peanut butter with the same amount of cream cheese and have a wonderful vanilla-flavored white frosting which is also perfect for holiday decorations. Depending on your taste, you can prepare some more frosting to use for the final cake decoration.
