Add chia seeds to a medium bowl. Pour in the milk and add vanilla extract. Stir all well and set aside for 15 minutes.
In another bowl, mix together pumpkin puree, cinnamon, and nutmeg.
Add soaked chia to serving glasses and finish with the pumpkin mixture. Optionally, top with nuts and drizzle with maple syrup.
