Preheat the oven to 350°F. Line a baking pan with parchment paper and set aside.
In a medium bowl, combine together flour, Zen Spirit cacao powder, instant coffee, baking soda, and salt. Mix all well and set aside.
In another bowl, combine together brown sugar, granulated sugar, egg, melted margarine, and vanilla extract. Using a hand mixer, beat the ingredients until completely smooth.

Scoop out about two tablespoons of the dough in the prepared baking pan and bake for 10 minutes.
