Ingredients

  • 1 ½ cups all-purpose flour
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 stick butter, unsalted
  • 2 tbsp Zen Spirit Maca powder
  • 2 tbsp sour cream
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Zest of one lime
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 4-5 blood oranges

DIRECTIONS

  • Preheat the oven to 350 degrees. Grease an 8-inch springform pan with some cooking spray and set aside.

  • In a bowl of a stand mixer, combine all ingredients together. With a paddle attachment on, beat well for 3-4 minutes on medium speed, scraping down the sides of the mixer.

  • Meanwhile, thinly slice oranges and remove any seeds. Sprinkle the prepared springform pan with some brown sugar and arrange sliced oranges.

  • Pour the prepared batter over oranges and bake for 50 minutes or until a toothpick inserted in the middle comes out clean.

  • Transfer to wire rack and cool completely before serving.
